A Passover Matzo-Cheese Kugel

Every family has its own recipes and kitchen traditions, passed on in the kitchen or, sometimes, shared in Mama’s or Bubby’s handwriting. This Passover Matzo-Cheese Kugel comes from the family of one of our team members. “When I graduated from college, I asked my mom and grandma to hand-write and compile a binder of family recipes for me. This one is from my grandma’s aunt, Mollie. Along with her sister (my great grandma) and a brother, Mollie immigrated from Poland to New York. Though I never met her, her memory lives on in this recipe!

(Great-Great) Aunt Mollie’s Matzo-Cheese Kugel

Serves 6

Ingredients
6 matzos, broken into large pieces 
5 eggs
1 cup milk 
I lb. cottage cheese 
1 tsp salt
¼ cup sugar
1 tsp cinnamon 
3 Tbsp melted butter 

Directions

  • Beat eggs in milk. Combine thoroughly with cottage cheese, salt, sugar, cinnamon + butter. 
  • In greased 1+1/2 qt. baking dish (or 8″ sq pan), arrange half the matzo. Pour half the cheese mixture over it. 
  • Repeat with matzo + mixture. 
  • Bake at 350 for 40 minutes or until set. Serve with sour cream if desired.
